Pumpkin Bliss Pancakes

Ingredients: 

  • 4 tablespoons coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon happy mushroom blend
  • 1/2 cup pumpkin puree
  • 1 tablespoon maple syrup
  • 1 cup almond milk
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tsp cinnamon
  • 1 tablespoon baking powder
  • 1 cup whole wheat flour

How to make: 

Combine all of the wet ingredients in one bowl, and wet ingredients into another bowl. Then, fold the dry ingredients into the wet ingredients. 

Oil a pan and set on medium heat. Using a 1/3 cup measuring cup, scoop the batter into the preheated skillet. Cook the pancakes for 3 minutes on each side. Repeat the process with the remaining batter, reoiling the skillet if necessary. Serve the pancakes warm or stick them in the fridge/freezer for future breakfast!
